Ingredients

3 eggs

8oz (1 stick) butter, browned, set aside to cool completely

2 cups all purpose flour

1/2 cup light brown sugar, packed

1 teaspoon pumpkin spice (or 1/2 teaspoon each of cinnamon and nutmeg)

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 cup buttermilk, or milk of choice

1 teaspoon vanilla extract

2 apples rinsed and sliced into

1/4 inch thick chunks

1/4 cup demerara (or brown) sugar

2-3 tablespoons white sesame seeds, for garnish (optional but highly recommended)

Method

Preheat oven to 350 degree F.

Butter and line a 9 inch spring form cake pan or regular cake baking pan and set aside.

In a large bowl, mix flour, brown sugar, pumpkin spice, salt, and baking soda and powder. Set aside.

Wash and dice apples into 1/2 inch pieces. Make sure to have the apples roughly the same size but don’t get too hung up on uniformity. Add the chopped apples to the flour mixture, coating the apples on all sides. Set aside.

In a medium bowl, combine the wet ingredients. Whisk browned butter, eggs, buttermilk and vanilla.

Pour wet ingredients into the flour mixture, with a spatula, fold in the ingredients until the batter forms and there are no pockets of dry ingredients.

In a buttered pan lined with parchment paper, pour batter and smooth the top ensuring the batter is even. Sprinkle with demerara sugar and white sesame seeds and bake cake for 40-45 minutes or until an inserted cake tester comes out clean.
